Warm Potato Chai Muffins

Ingredients

  • 1 cup Mashed Potatoes (prepared using dehydrated potato flakes, according to manufacturer recommendations)
  • 1 each Medium Banana, peeled
  • 1/3 cup Coconut Oil, melted
  • 3 each Large Eggs
  • 1/3 cup Granulated Sugar
  • 1 teaspoon Vanilla Extract
  • 2 cups All Purpose Flour
  • 3 tablespoons Instant Chai Tea Powder
  • 1/3 cup Walnuts, roughly chopped
  • 1/3 cup Rolled Oats
  • 1/4 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Cinnamon
  • 1/8 teaspoon Salt

Preparation

  1. Prepare the mashed potatoes according to the manufacturer’s recommendation and allow them to cool slightly.  This is also a great way to use up plain left-over mashed potatoes or the flesh from baked potatoes.
  2. Preheat the oven to 375 °F.
  3. Place the mashed potatoes and the banana in a large bowl and mash together until well combined add the coconut oil, eggs, sugar, and vanilla extract then stir.
  4. In a separate bowl, combine the flour, chai tea powder, walnuts, rolled oats, baking soda, baking powder, cinnamon, and salt. Stir until well combined.
  5. Gradually add the dry ingredients into the wet ingredients and mix until just combined, do not over mix or the muffins maybe tough.
  6. Line the muffin pan with cupcake liners or grease and flour the pan the same as you would for a cake with coconut oil and a little all-purpose flour.  Tip:  Using an ice cream scoop to scoop out the batter into each cup will ensure the muffins are an even size.
  7. Sprinkle each of the muffins with some rolled oats if desired.
  8. Bake muffins for 25-30 minutes or until you poke them with a skewer, and it comes out clean.
  9. Let muffins cool before enjoying.
