New Research on Potatoes and Athletic Performance
In a new study sponsored by the Alliance for Potato Research and Education (APRE) that was recently published in The Journal of Applied Physiology, researchers at the University of Illinois reported that, “Potatoes are a promising alternative for athletes because they represent a cost effective, nutrient dense and whole food source of carbohydrates.” This was a proof-of-concept, randomized-crossover trial done in 12 trained cyclists (nine males; three females). Study participants were fed one of three test meals on three separate cycling days consisting of either 15 g of baked russet potato flesh purée (128.5 g per bolus), a commercial carbohydrate gel (23 g per bolus) or water every 15 minutes during prolonged exercise (>~2 hrs). While these results indicate a positive benefit, findings are not conclusive and should not be generalized to different populations, including by sport or training level.
Many of your athletes might experience flavor fatique during prolonged exercise and as you look to expand and diversify the fueling options you recommend, potatoes are an easy, portable and convenient option.
