We moved from the city to the country and life was slower. Running seemed like something people who have time on their hands do? haha I trained for my first 5k in 2013, then life got busy. In September of 2020, I laced up my shoes again and was 100% sold on Jeff Galloway’s run-walk method! Within 7 months, I completed my first half marathon, then multiple races, a 100-mile relay, an Ironman 70.3 in 2023, and in 2025, my first ultra-marathon of 50k!I was born and raised in Indiana County, Pennsylvania, later lived in Baltimore where I met my husband Phillip, and now live back in Western Pennsylvania. We are the co-founders of Rent The Chicken, helping people raise backyard hens and hatch chicks across the USA & Canada.

Why are potatoes your go-to fuel?
First… they are delish! At Eagle Up Ultra they ALWAYS have salted potatoes. During my 50k, after 4 loops and a nap, I was struggling—then after prayer, electrolytes, and buttered salted potatoes, I perked up and felt fresh again! Was it the prayer or the potatoes? Likely both!
Favorite potato dish:
That’s hardly a fair question! I’m like Forrest Gump and shrimp when it comes to potatoes—fries, baked, mashed, casseroles, chips… oh my!
Why did you enter the Speedy Spud contest?
With my love of potatoes and running… how could I not?! I rent chickens for a living—how could I pass up running a legendary Pittsburgh race in a potato costume!?
How are you prepping for the race?
I found a half marathon training plan on my Garmin watch and got to steppin’! I tell people I’m secretly training for Pittsburgh in hopes of wearing a potato costume—great conversation starter :)
