Meet America's Next Speedy Spud!

The Speedy Spud Sponsorship celebrates the fantastic benefits of potatoes for athletes of all fitness levels

Team Potato has selected the next speedy runner to race in a custom-made potato costume! Follow along here as our spud-tacular athlete trains, fuels, and competes.

Meet the Next Speedy Spud, Ainsley Chapman!

Ainsley Chapman, our second-ever Speedy Spud, ran the Salt Lake City Half Marathon on April 26 in style. The style? A custom-made potato costume  showcasing the nutrient-dense spud’s potential to fuel athletic performance.

She finished the half-marathon in the Speedy Spud costume with an impressive time of 1:41:15—about one mile every 7 minutes and 44 seconds!

Ainsley is a busy potato. When she wasn’t working full-time as an engineer or studying for her master’s degree, Ainsley was training for her half marathon and making efficient, delicious meals to fuel her busy lifestyle!

Ainsley caught the running bug in college and loves that it challenges her to improve every day.

To fuel her training, Ainsley was all about efficiency (and flavor), so she used a make-ahead roasted potato recipe passed down from her mom.

Fun fact! Ainsley found the Speedy Spud contest through the Team Potato Strava challenges. Become a speedy spud yourself by joining Team Potato–our community of athletes dedicated to achieving their best athletically and in everyday life by nourishing their bodies with potatoes.

When you join Team Potato, you will find inspiration and encouragement to fuel with potatoes, accelerate your performance potential, and achieve your goals. You can also compete in fun challenges and win fantastic potato prizes.

Potatoes Power Performance

Potatoes aren’t just delicious, they’re a powerhouse of nutrition for athletes worldwide.

Whether you’re training for your first 5K or already competing with elite athletes, potatoes help fuel your body so you can go the distance.

Did you know? Potatoes are a nutrient-dense vegetable that provides:

+

26g (9% daily value) of quality carbohydrates.

Carbohydrates are the primary fuel for the body and brain.

+

15% of your daily potassium (620 mg per serving), which is more than a medium-sized banana (422 mg per serving).

Potassium is essential for muscle functioning.

+

3 grams of plant-based protein.

Protein is a key component of muscle growth.

+

30% of your daily Vitamin C to help boost the immune system.

It also aids in collagen production, a major muscle tissue component.

+

2 grams of fiber.

Fiber helps regulate blood glucose and increases satiety, making you feel full longer (and preventing those mid-run hunger pangs).

+

110 calories for energy.

Easily digestible and more energy-dense than any other popular vegetable, potatoes are perfect for runners.
