Meet the First-Ever Speedy Spud, Izzy Aguiar!

It’s a bird, it’s a plane…it’s our first-ever Speedy Spud, Izzy Aguiar!

In her quest to become the fastest tuber on two legs, Izzy shared, “According to all known laws of aviation, there’s no way a potato should be able to get off the ground. As the Speedy Spud, I will show you how high the potato can fly.”

Izzy’s favorite potato dish? Hash browns!

“Every Sunday, my family and I used to sit and make breakfast together, and my dad would make hashbrowns. I have a very nostalgic association with hashbrowns, something I make at home for special occasions.”

Izzy is a medical student at Texas Christian University’s Burnett School of Medicine in Fort Worth. She started running in middle school and loved “the individual aspect of the sport where your results are only determined by how much effort you decide to put into training.”

She said potatoes are “essential” to fueling for training because most potato dishes are easy to make, easy to digest before a run, and nutrient-dense enough that “I always have enough energy to finish all of my workouts.”
