Meet the Second Speedy Spud, Ainsley!

Ainsley Chapman, our second-ever Speedy Spud, ran the Salt Lake City Half Marathon on April 26 in style. The style? A custom-made potato costume  showcasing the nutrient-dense spud’s potential to fuel athletic performance.

She finished the half-marathon in the Speedy Spud costume with an impressive time of 1:41:15—about one mile every 7 minutes and 44 seconds!

 

Ainsley is a busy potato. When she wasn’t working full-time as an engineer or studying for her master’s degree, Ainsley was training for her half marathon and making efficient, delicious meals to fuel her busy lifestyle!

Ainsley caught the running bug in college and loves that it challenges her to improve every day.

To fuel her training, Ainsley was all about efficiency (and flavor), so she used a make-ahead roasted potato recipe passed down from her mom.


“As a runner, I need nutrient-dense food with an emphasis on carbohydrates in order to complete my runs and continually improve,” she said. “Potatoes offer a versatile and affordable way to get those nutrients.”
