BBQ Bacon Baked Potato

Ingredients

  • 4 Russet Potatoes
  • 1 lb. of hickory smoked bacon
  • 1/2 cup of bbq seasonings (made up of 1 part red pepper, 1 part black pepper, 1 part garlic powder, 1 part paprika)
  • 1 cup of sharp cheddar cheese, shredded
  • 1 1/2 cups of sour cream
  • 1/4 cup of green onions, chopped
  • 1/4 cup of hickory barbecue sauce

Preparation

  1. Preheat the oven to 350 °F.
  2. Wash off, rub, and completely dry the potatoes.
  3. Wrap each potato in bacon horizontally, and use toothpicks to hold the bacon in place and to create holes in the potato.
  4. Spray a baking tray with non-stick cooking oil. I prefer to use coconut oil.
  5. Line the tray with the bacon wrapped potatoes.
  6. Evenly sprinkle the bbq seasoning on top of each potato.
  7. Bake the potatoes in the oven at 350 degrees (F) for 55-60 minutes, or until the bacon and the potato is fully cooked.
  8. Once they are done, remove the potatoes from the oven.
  9. Slice a vertical line from one end of the potato to the other. Repeat for each potato.
  10. Fill the middle of each of the potatoes with equal parts of cheddar cheese, and then top them with sour cream, green onions, and drizzle barbecue sauce on top. Serve immediately and enjoy!
