Ingredients

  • 3 cups (about 340 grams) Frozen Hash Brown Shreds
  • 2 teaspoons (10 milliliters) Neutral Oil or Butter
  • ½ teaspoon Kosher Salt
  • ¼ teaspoon Black Pepper
  • 4 Breakfast Sausage Patties
  • 8 Slices American Cheese
  • 8 Large Eggs (about 400 grams)
  • 2 tablespoons (30 milliliters) Milk, optional
  • 4 Everything Bagels
  • Hot Sauce, for serving (optional)

Preparation

Preparing the Hash Browns

  1. Heat a large, heavy nonstick skillet over medium-high heat and add the oil or butter.
  2. Divide the frozen hash brown shreds into four equal portions (about ¾ cup each). Place one portion in the skillet and spread into an even 3½- to 4-inch patty, about ¼- to ⅜-inch thick. Press firmly with a spatula to compact the shreds.
  3. Cover with a lid and cook for 2 to 3 minutes to help the potatoes cook through. Remove the lid and continue cooking, pressing occasionally with the spatula, for 3 to 4 minutes, or until the bottom is deeply golden and crisp.
  4. Carefully flip the round, season with the salt and pepper, and cook uncovered for another 3 to 4 minutes, or until the second side is golden brown and crispy.
  5. Repeat with the remaining hash brown rounds, adding additional oil or butter to the skillet as needed.

Preparing the Sausage & Eggs

  1. Meanwhile, cook the sausage patties according to the package directions or until browned and cooked through.
  2. Top each patty with one slice of American cheese during the final minute of cooking.
  3. Whisk together the eggs and milk, if using.
  4. Lightly coat a large nonstick skillet with cooking spray or oil and pour in the eggs.
  5. Cook over medium-low heat until the eggs are almost set, gently lifting the edges with a spatula so the uncooked egg flows underneath.
  6. Once fully set but still tender, cut into four equal portions and fold each portion in half to create folded egg patties.
  7. Place one slice of American cheese on top of each folded egg while still warm.

Preparing the Sandwiches

  1. Toast the bagels until lightly golden.
  2. To assemble, layer the sausage patty, folded egg, and crispy hash brown patty on the bottom half of each bagel. The melted cheese should sit between each layer.
  3. Top with the remaining bagel half and serve immediately with hot sauce, if desired.

  • Frozen hash brown shreds work best straight from the freezer. Thawing first can make them harder to crisp due to the residual moisture.
  • Pressing the hash brown rounds firmly helps them hold together while cooking and promotes even browning.
  • Avoid turning the hash browns too early. Let them develop a deep golden crust before flipping to achieve maximum crispness.
  • American cheese creates the classic diner-style melt, but cheddar, pepper jack, mozzarella, or Swiss are delicious alternatives.

Time-Saving & Make-Ahead Tips

  • For meal prep, bake the hash brown rounds on a parchment-lined baking sheet instead of cooking them individually. Divide the frozen hash brown shreds into four circles, lightly spray with oil, and bake at 425°F (220°C) for 20 minutes. Flip and bake for 10 to 15 minutes more, or until crisp and golden.
