Description

Cubed potatoes, roasted extra crispy, provide the perfect crunch to any salad. Use them in place of croutons for an additional vegetable on your plate.

Ingredients

  • 1 pound (0.45 kilograms) Russet Potatoes, diced ¾ inch
  • 1 tablespoon (15 milliliters) Olive Oil
  • 1 teaspoon (2 grams) Salt
  • ½ teaspoon (~1g) Ground Black Pepper

Preparation

  1. Preheat the oven to 400°F (204°C)
  2. Cut the potatoes into even, ¾-inch chunks. Add them to a bowl.
  3. Drizzle with olive oil and toss. Season the potatoes with the salt and black pepper then toss again to combine.
  4. Place the potatoes on a baking sheet lined with aluminum foil.
  5. Roast the potatoes for 18-22 minutes or until they are golden and crispy.
  6. Allow the potatoes to cool; then top your favorite salad and enjoy!
