Description

Irio is a traditional dish in Kenya made with mashed peas, potatoes, and white corn made to be hearty, nourishing, and communal. It's a a satisfying side for stews, grilled meats, and fish.

Ingredients

  • 2 ½ pounds (1,134 grams) Russet Potatoes, diced
  • 2 ½ cups (225 grams) Green Peas, frozen
  • 1 ½ cups (250 grams) Corn Kernels, canned (rinsed and drained)
  • 2 tablespoons (28 grams) Butter, room temperature
  • Salt and Pepper, to taste

Preparation

  1. Peel the potatoes and cut each into evenly sized chunks, about 1-inch.
  2. Add the potatoes and peas into a large stockpot and cover with cold water so that the water line sits about 1 inch above the potatoes.
  3. Cook on medium-high for about 15-20 minutes or until the potatoes are tender.
  4. Drain the water and return to the pot.
  5. Use a potato masher or sturdy whisk to break up potatoes, until the potatoes reach your desired consistency.
  6. Stir the corn kernels and butter into the mash.
  7. Season with salt and black pepper.
  8. Serve hot and enjoy!
