Ingredients

Mediterranean Potato Bowl

  • 12 cups (1680 g) Frozen diced red potatoes

Honey Spiced Chicken

  • 2 tbsp (12 g) Harissa paste
  • 2 tbsp (30 ml) Olive oil
  • 2 tbsp (30 ml) Honey
  • 5 ¼ cups (1176 g) Chicken, diced, frozen, fully cooked

Lemon Tahini Dressing

  • 1/3 cup (60 ml) Tahini (Sesame Paste)
  • 1 tablespoon (4 g) Garlic Powder
  • ¼ cup (10g) Parsley, chopped
  • 3 tablespoons (4g) Cilantro, chopped
  • 1/3 cup (60 ml) Lemon Juice
  • 1/3 cup (60ml) Olive Oil
  • ½ cup (120ml) Cold Water
  • ¼ teaspoon (2g) Sea Salt

Mediterranean Salsa

  • 1-½ cups (270g) Tomatoes, diced
  • 1-½ cups (270g) English Cucumbers, diced
  • ½ cup (90g) Black Olives, sliced
  • ¾ cup (168 g) Feta cheese, crumbles
  • ¾ cup (170 g) Parsley, chopped
  • 6 cups (180 g) Baby Spinach

Preparation

  1. Gather all ingredients and equipment needed.
  2. Preheat oven to 400°F (204°C).
  3. Place frozen diced potatoes on a parchment paper lined sheet tray and roast in the preheated oven for 18-20 minutes until golden brown and crispy, or follow the manufacturer’s instructions. Allow the potatoes to cool before using.
  4. Prepare the sauce for the chicken by combining the harissa, olive oil, and honey in a small bowl. Set aside until ready to use. It can be made the day before if desired. Keep chilled at 40 F (4 C).
  5. Place the chicken on a sheet pan lined with parchment paper and place into the oven. Heat the chicken until the internal temperature reaches 165 F (74 C), about 8-10 minutes. Cool the chicken completely and transfer the chicken to a bowl. Pour the spiced honey mixture over the chicken. Toss gently to combine and keep refrigerated until ready to use.
  6. Make the dressing by combining all the dressing ingredients in a bowl and whisking until it is well combined. This step can also be done in a food processor. Keep chilled at 40 F (4 C).
  7. Right before assembly, toss the spinach in the lemon tahini dressing. Note that you may only need some of the dressing that was prepared. Simply use just gently enough to coat the spinach.
  8. Place a ¼ cup of dressed spinach down on the bottom of each serving dish to assemble. Add ½ cup of the roasted potatoes, followed by ¼ cup of the honey-spiced chicken. Finally, top the chicken and potatoes with a ¼ cup of Mediterranean salsa.
