Description

A Caesar salad in the palm of your hand. The potatoes provide a great source of fiber, while the chickpeas are a great source of plant-based protein. The whole-grain tortilla provides complex carbohydrates to give you long-lasting energy. It's a great combination of flavors and textures that will satisfy your hunger.

Ingredients

  • 24 each (150 g) Whole grain tortillas
  • 12 cups (2520 g) Frozen diced potatoes
  • 12 oz (355 ml) Caesar Dressing, prepared
  • 12 oz (354 ml) Greek Yogurt, non-fat
  • 42 oz (1190 g) Chickpeas, canned, drained
  • 6 cups (450 g) Romaine lettuce, shredded
  • 1 ½ cups (150 g) Parmesan cheese, grated

Preparation

  1. Gather all ingredients and equipment needed.
  2. Preheat the oven to 350°F (176°C).
  3. Place frozen diced potatoes on a parchment paper lined sheet tray and roast potatoes for 20 minutes until light golden brown in color or follow the manufacturer’s instructions. Remove potatoes from the oven and let cool.
  4. In a large bowl or full hotel pan, add shredded lettuce, chickpeas, cooled roasted potatoes, grated parmesan cheese, Caesar dressing, and yogurt, and toss until thoroughly mixed.
  5. To assemble, lay a whole grain tortilla, scoop potato chickpea Caesar salad, and roll to make a wrap. And repeat until the wraps are finished.
