Description

Crispy tots topped with tender grilled pieces of chicken smothered in a spicy cayenne pepper sauce and topped with tossed breadcrumbs and B&B pickles.

Ingredients

  • 1½ pounds (0.68kg) Frozen Tots
  • As Needed Nonstick Coconut Oil Spray
  • ½ cup (60ml) Unsalted Butter, melted
  • 2 tablespoons (28g) Cayenne Pepper
  • 2 tablespoons (28g) Light Brown Sugar
  • ½ tablespoon (7g) Smoked paprika
  • 1 teaspoon (4g) Garlic Powder
  • 1 teaspoon (4g) Salt
  • 1 teaspoon (4g) Freshly Ground Black Pepper
  • 4 (4 ounce/113g) Grilled Chicken Breasts
  • ¼ cup (29g) Panko Breadcrumbs
  • 8 slices Bread and Butter Pickles
  • 1 tablespoon (2g) Fresh Parsley, chopped

Preparation

  1. Set the air fryer to 425°F (218°C).
  2. Arrange the frozen tots on a baking sheet and evenly mist them with coconut oil or nonstick spray.
  3. Transfer them to the air fryer and cook for 18-20 minutes or until they are golden and crispy. You may have to do two batches to avoid overcrowding your air fryer.
  4. While the tots are cooking, make the sauce by combining the butter, lard, cayenne, brown sugar, paprika, garlic powder, salt and pepper in a bowl until they are all well combined.
  5. Warm up the prepared chicken breasts, or cook to your preference.
  6. As soon as the tots are crispy, divide them evenly into four serving bowls. Arrange a chicken breast on top each serving and spoon some of the sauce over the chicken.
  7. Garnish the sauced chicken with a sprinkling of breadcrumbs, the parsley and two slices of B&B Pickles.
  8. Serve right away and enjoy.
