Ingredients

For the Potatoes

  • 200-300 g Frozen Hash Browns, Crinkle Cut Fries, Wedges, and Potato Half Shells
  • 2 pieces Calamansi (or Lime)
  • Pinch of Salt and Pepper
  • ¼ cup Flour
  • ½ cup Onion
  • ¼ cup Green or Red Bell Pepper

For the Sauce

  • 2 tbsp Mayonaise
  • 1-2 chili peppers - minced or ¼ tablespoon chili flakes
  • ⅛ teaspoon ground black pepper

Preparation

  1. Cut assorted frozen potatoes into chunks, marinate with calamansi or lime, and season with salt and pepper.
  2. Coat in flour and deep fry until golden and crispy, then remove from fryer and place onto a paper towel to soak up extra oil.
  3. Dice onions and bell peppers.
  4. Prepare sauce by mixing together mayonnaise and seasoning.
  5. Combine the fried potatoes, onions, and peppers. Add sauce to desired taste.
  6. Heat a sizzling plate or cast iron skillet in the oven or over the stove to get it very hot. Wipe with small amount of oil.
  7. Place the Potato Sisig on the plate or skillet and let sit for a minute.
  8. When the potatoes and onions are caramelized or browned, slightly mash with a fork leaving some chunks.
  9. Add small amount of sauce. Serve with calamansi or lime and chili.
