Description

Tender prawns are a blended with fresh herbs and sesame seeds before being spread on waffle fries, then fried in peanut oil and served with a sweet chili dipping sauce. Perfect for a shareable appetizer.

Ingredients

Shrimp Toast Waffle Fries

  • 1 pound (454g) Shrimp, raw, peeled and deveined
  • 2 each (120g) Egg Whites
  • 1 tablespoon (15ml) Soy Sauce
  • 8 each (90g) Green Onion, finely sliced
  • 1 tablespoon (9g) Potato Starch
  • ½ cup (8g) Cilantro Leaves
  • 1 tablespoon (15ml) Sesame Oil
  • 2 each (10g) Garlic Cloves, grated
  • 24 each (360g) Waffle Fries, frozen
  • 1/3 cup (45g) Black Sesame Seeds (optional)
  • 2 quarts (2 liter) Peanut Oil (vegetable or canola oil can be subbed)
  • 2 teaspoons (5g) Kosher Salt

Sweet Chili Dipping Sauce

  • ¾ cup (180ml) Sweet Chili Sauce
  • ¼ cup (60ml) Rice Vinegar
  • 1 tablespoon (15ml) Fish Sauce
  • 1 tablespoon (15ml) Oyster Sauce
  • 2 tablespoons (30ml) Sambal Olek (Malaysian Chili Garlic Paste)

Preparation

  1. Combine the shrimp, egg whites, soy sauce, green onions, potato starch, cilantro, sesame oil, and garlic in a food processor. Pulse the mixture until it is finely minced (do not over-mix). This can also be made without a food processor and be chopped by hand.
  2. Spread the mixture evenly over the waffle fries. Then dip the shrimp side down in sesame seeds if desired.
  3. Heat the oil to 325 F (163 C) in a cast iron skillet (any heavy-bottomed shallow pan will work). Carefully place the waffle fries shrimp side down into the hot oil. Cook until they are golden brown, about 2-3 minutes. Adjust the heat if need be. Carefully flip the waffle fries and cook until the potato side is done, about 3-4 minutes. Remove from the heat and transfer to a wire rack or to a paper towel-lined plate, then repeat with the remaining shrimp toasts.
  4. To make the dipping sauce, simply place all the ingredients together in a bowl and whisk to combine. Keep refrigerated until ready to use.
  5. To serve, arrange some of the shrimp toast on a plate and serve it with some dipping sauce.
