Description

A hearty and tangy potato salad comprised of flavorful turkey ham, juicy pineapple mixed with a sweet chili Hawaiian dressing with fresh green onions and crunchy sesame seeds.

Ingredients

  • 18 cups (2.3 kg) Red Potatoes (Diced)
  • 6 cups (768g) Pineapple (Diced)
  • 6 Cups (1.36kg) Turkey Ham, Deli (Cooked and Diced)
  • 2 Cups (480ml) Sweet Chili Sauce
  • 1 ½ cups (360ml) Water
  • 1 ½ Cups (192g) Green Onions (Chopped)
  • ¾ Cup (96g) Sesame Seeds, Black and/or White

Preparation

Gather and scale all ingredients and needed equipment.

To prepare potatoes:

  1. Place diced potatoes in a large saucepan/pot and cover with cold water. Bring to a boil and then to a simmer and cook uncovered for 15-20 minutes, until tender. Drain and place in a large bowl, allow to cool completely.
  2. In the same large bowl with the cooked potatoes (8 cups), add in diced cooked turkey ham (3 cups), diced pineapple (3 cups), and sweet chili sauce (2 cups) mixed with water (1 ½ cups). Then add green onions (1 ½ cups) and sesame seeds (¾ cup). Toss gently.
  3. Scoop 1 cup portion scoop into serving dish/bowl.

  • ¼ cup Fruit
  • 2 ounces Meat/Meat Alternative
