Serves 4 (8-ounce portions)

Ingredients

  • 1 tablespoon Extra Virgin Olive Oil
  • 1 cup Yellow Onions, chopped 1-inch pieces
  • 1 tablespoon Garlic, sliced thin
  • 1-1/2 poundsRed Potatoes, cut into ½ inch slices
  • 28 ounce can Whole Plum Tomatoes, canned
  • ½ cup Chicken Stock/Broth
  • 1 cup Roasted Red Peppers, sliced ¼ inch strips
  • ½ cup Kalamata Olives, sliced in half lengthwise
  • 2 tablespoons Smoked Paprika, ground
  • 1 tablespoon Kosher Salt
  • 2 teaspoons Freshly Ground Black Pepper

Garnish (optional)

  • 2 tablespoons Fresh Parsley, chopped
  • 1 tablespoon Fresh Lemon Juice
  • 1 tablespoon Extra Virgin Olive Oil

Preparation

  1. Put the multicooker in sauté mode high, add the olive oil and sauté the onions for 2-3 minutes or until they are soft and translucent. Add the garlic and cook for 1-2 minutes more, stirring constantly.
  2. Add the potatoes and chicken stock.
  3. Turn off sauté mode and put manual high for 9 minutes, allow for a natural release for 5 minutes then manually release the pressure.
  4. Add the roasted peppers, olives, and paprika.  Adjust the seasoning with the salt and pepper. Before serving garnish with chopped parsley, lemon juice and more olive oil if desired.
