Description

This chili is both filling and flavorful. Chocked with ground turkey, potatoes, and white beans, it gets topped with fresh herbs or a sprinkle of cheese, to create a wholesome, balanced meal that’s sure to please.

Ingredients

  • 1 c (160 g) White Onion, chopped
  • 3 cloves (9 g) Garlic, minced
  • 1 tbsp (14 g) Neutral Oil
  • 1 tbsp (18 g) Salt
  • 2 tsp (4 g) Pepper
  • 1 lb (454 g) Ground Turkey
  • 2 cans (4 oz each) Green Chili
  • 2 tsp (4 g) Ground Cumin
  • 1 tbsp (1 g) Dried Oregano
  • 2 tbsp (16 g) Granulated Garlic
  • 1 lb (454 g) Yellow Potatoes, diced
  • 5 c (1180 mL) Chicken Broth
  • 1 can (15 oz) Cannellini Beans, drained and rinsed
  • 1 tbsp (1.5 g) Parsley, chopped

  • Greek Yogurt
  • Sour Cream
  • Cilantro
  • Jalapenos, sliced
  • Cheese, shredded

Preparation

  1. Combine oil, onions, and garlic in a large heavy bottom pot over medium heat. Cook for 2-3 minutes, until fragrant.
  2. Add in the ground turkey and sauté over medium heat, until lightly browned. Season the turkey with salt and pepper to your preference.
  3. To the pot, add the can of green chilies, the cumin, and the oregano. Mix until well combined and cook for 2 additional minutes.
  4. Add the chicken broth and washed and diced (about 1/2-inch pieces) potatoes. Simmer for 15-20 minutes or until the potatoes are fork tender. Stir occasionally to ensure nothing sticks. Taste as you go and make sure to adjust your seasonings to your preferences (salt, pepper, cumin, and oregano).
  5. Once the potatoes are tender, add in the Cannellini Beans and cook for 5 more minutes.
  6. Stir in the parsley.
  7. Serve with your choice of toppings and enjoy!
